If you only follow one rule, this would be the MOST important. Ceviche is made through marinating raw fish in lime juice. The fish should be only one or two days old. It should be well refrigerated and properly handled to make sure that it is healthy and bacteria free. We do this by going through the most reputable distributors in Lima and teaching our kitchen staff the best way to handle the food.
You will want to make sure that there are a lot of options to choose from. It’s true that there are some places that make a good ceviche but that’s about all. We’ve noticed that when people find a good restaurant they may want to come back over and over again. When you have found a great experience, why change? I know that sometimes ambiance doesn’t seem as important as some of the other items mentioned above but it really makes an impact on your whole experience. Even with the best fish and the most experienced waiters- bad lighting, uncomfortable chairs, and a boring or even ugly restaurant can greatly detract from your experience.
